Moûts débourbés, fermentation alcoolique en cuves thermorégulées, fermentation malolactique totale, mise en bouteilles au domaine après dix mois d’élevage sur lies fines pour les Coteaux Bourguignons, Petit Chablis et Chablis, et dix-huit mois pour les Chablis « Vieilles Vignes » et les Chablis 1er Crus.

CHABLIS "CUVEE CLOVIS"

« Mémoire des générations qui nous ont transmis leur savoir-faire, cette cuvée est le fruit de l’attachement de notre famille au travail de la vigne et du vin. Clovis, notre arrière-grand-oncle, vigneron, a planté les ceps dont les racines, encore aujourd’hui, nous donnent le caractère de cette cuvée chargée d’histoire. « 

 

Cuvée spéciale, appellation Chablis,  sélectionnée à partir de « Vieilles Vignes » plantées par Clovis, en partie vinifiée en fût. Millésime 2017.

Characters of the appellation: intense nose revealing notes of fresh fruit, mouth ample, neat and well balanced, purity and vivacity with a minerality reminiscent of the terroir. The limited yields of the old vines give this wine a nice concentration.
