VINIFICATION OF OUR WINES
Musts settled, alcoholic fermentation in temperature-controlled vats, total malolactic fermentation, bottled on the estate after ten months' ageing on fine lees for Coteaux Bourguignons, Petit Chablis and Chablis, and eighteen months for Chablis "Vieilles Vignes" and Chablis 1er Crus.
CHABLIS "CUVEE CLOVIS
"Memory of the generations who have passed on their know-how to us, this cuvée is the fruit of our family's attachment to the work of vines and wine. Clovis, our great-great-uncle, a winegrower, planted the vines whose roots, even today, give us the character of this cuvée steeped in history. "
Cuvée spéciale, Chablis appellation, selected from "Vieilles Vignes" planted by Clovis, partly vinified in barrels. Vintage 2017.
